Grape varieties :
50 % Syrah. Vineyard planted in 1975 in rocky, schistose soil, facing north.
25 % Grenache. Vineyard planted in 1950 in rocky, schistose soil, facing north.
25 % old Carignan. Vineyard planted in 1905 in rocky, schistose soil, facing north.
Vinification :
Hand picking. Cold maceration for one weeks. Then, traditional maceration for two weeks. Gentle pressing. Maturing twelve months in barrel (5 hL of 3 wines).
Tasting :
Appearance : Deep ruby-red color.
Nose : Complex notes of ripe fruits, spices, toast and vanilla.
Palate : Oaky is harmonious, attack is well-rounded.
Serve between 15 and 17 °C.
Our suggestions :
This wine will ideally complement game stew, roasts and read meat as well as mature chesses. It will also be excellent with cherry duck or pheasant.
