Grape varieties :
50 % Old Carignan planted in 1905 in rocky schistose soil, at a height of 200 meters, facing north.
25 % Syrah planted in 1999 in schistose soil, facing south.
25 % Grenache noir planted in 1987 in gneiss soil, facing south.
Vinification :
Hand picking. Cold maceration for one weeks. Then, traditional maceration for two weeks. Gentle pressing. Maturing in stainless steel vats for twelve months.
Tasting :
Appearance : Deep ruby-red color.
Nose : Complex notes of ripe fruits, spices, and blackcurrant.
Palate : The fruit is present, the attack is fresh, the tannin well rounded, with good length.
Serve between 14° et 16° C.
